Unquestionably, if I ask my husband what he would most like to eat for dinner, he's going to say steak. However, steak is usually reserved for special occasions because it's not exactly in the budget to eat steak very often.

London broil, on the other hand, is often much less expensive and still amazingly delicious and mouthwatering. And just like any good steak, it's simple to prepare and quick to cook.

How to Cook Amazing London Broil on a Cast Iron Griddle

While I was testing my griddle last week and making all the things on my newest piece of cast iron cookware, I happened upon a sale on London Broil at the store. I knew it needed to be the next thing I cooked on the griddle. (Check out my review of this cast iron griddle here).

We have been enjoying London broil like this for years. It is definitely a family favorite. We use a simple marinade of red wine (which thankfully also pairs well to drink with the steak during dinner), and a simple method for tenderizing the meat (loooooots of stabbing with a fork).

Before last week, our London broil was always cooked on the grill. I am thankful to have an alternative in my back pocket for when we don't feel like bothering with the grill or the grill master (my hubby) isn't home. Cooking the London broil on the griddle was incredibly easy!

This London broil is FULL OF FLAVOR. It's really the best of both worlds– steak dinner and budget-friendly.

We like our London broil, and our steaks, medium rare. (Psssst: it's the best way to eat steak, just saying). But, if that's not your thing, you can find different cooking temps in the recipe notes. Just keep in mind that you want it to be slightly less than the desired temp when you pull it off the pan because the meat will continue to cook a little while it rests.

And since you'll be saving so much time not fussing with the grill, you can go ahead and make a couple loaves of one-hour French bread and maybe some simple roasted Brussel sprouts too (seriously so good).

Description

Ingredients

  • 2 lb London Broil
  • 1 C dry red wine (we like Cabernet)
  • salt and pepper

Instructions

  1. Use a fork to stab the London broil thoroughly all over– front and back. Once you think you've stabbed it enough, stab it a little more. Combine the London broil and the wine in a dish or gallon zipper bag. Marinate the meat for at least thirty minutes, or up to twenty-four hours.
  2. Heat a cast iron griddle over medium high heat (grill side up) for about twelve minutes until it is quite hot. Remove the London broil from the wine marinade and liberally season the top and bottom with salt and pepper.
  3. Brush a thin coat of ghee or oil on the hot griddle. Place the London Broil on the griddle and cook for six minutes, without moving it. After six minutes, flip the London Broil over and cook the second side for another six to ten minutes, until the internal temperature* reads 125 for medium rare or 135 for medium. (The temperature will rise a little more as rests).
  4. Remove the London broil from the griddle to a cutting board and tent loosely with foil. Let the London broil rest for 10 minutes to let the juices redistribute. Then cut the meat into thin slices across the grain.

Notes

*Temperatures for London Broil:

  • 125 = rare
  • 135 = medium rare
  • 150 = medium
